On Saturday around 10:30 a.m., when the market traders in Santa Catalina are still adjusting the last crates of olives, the scent of butter and vanilla rises into the streets from a small café. In Palma, Souffle pancakes are currently landing on plates – tall, soft towers that yield a little when cut and wobble a bit. No wonder visitors photograph them before the first bite disappears.
What is different from normal pancakes?
In short: technique and patience. The base is nothing magical, but the preparation is tricky. The egg whites are beaten stiff and gently folded into the batter. Then the batter is piped into the pan with a piping bag, cooked slowly over very low heat, often with a lid. The result: a delicate, airy texture that when chewed almost reminds of a Souffle. Mallorca fits well into the café scene: visitors like the playful aspect, locals appreciate the artisanal preparation. And let's be honest: a photo of a fluffy stack of pancakes simply earns likes.
In short: not a dish for those in a hurry, but ideal if you crave a cozy break. And if you then stroll through the market, an espresso pairs perfectly with it.
